Since the opening of the restaurant at Café Oz Bordeaux, there's like a wind from Australia blowing in the corner of the basins afloat. A “melting port” district welcoming both trendy bars, nightclubs, homes and cultural venues. This emerging district of Bordeaux is appreciated by Bordeaux residents, who like to come and stroll along the quays and enjoy a beautiful view of the Garonne.

In this article, we take you to meet our chef, Olivier Germain, to find out who is behind the original and varied dishes of our restaurant in Bordeaux.

Interview with the chef of the Café Oz Bordeaux located in the Bacalan district

  • Can you introduce yourself and explain your role in the restaurant?

Olivier Germain, I have been the chef de cuisine since the restaurant opened in 2019. My role resembles that of an orchestra conductor, I lead the team to set the rhythm and the dance during the service and, in collaboration with the restaurant manager, we draw up the menu of the dishes offered.

  • Where did your passion for cooking come from? And your desire to make it your job?

I love cooking since my childhood. At the time, I couldn't do sports after school due to a health problem. My favorite activity was therefore to watch cooking shows, even if there were few of them in the 90s. I loved Joël Robuchon's “Bon appétit of course”! After the shows, I wrote down my favorite recipes to ask my mother to buy the ingredients I needed to make them.

  • What is your first gourmet memory?

When I was little, we met for a large family table in an Algerian restaurant. We all share a moment together around a couscous. I had a great time, and couscous is now my favorite dish to cook and eat!

  • Have you traveled during your career? If yes, what has it brought you?

I graduated from the hotel school in 2006. I then worked in Bordeaux (3-4 years), then I left for Paris (2 years), before going to London (3 years) and Australia (1 year). I returned to France in January 2014, to Bordeaux, my hometown. These different trips brought me a lot, I was able to learn how to cook the different products of the world.

  • What would you say if you had to describe your kitchen in three words?

It's not an easy question… But I would say that my cooking is generous, spicy, and that it tells a story.

  • Do you have an ingredient that you like working in particular?

Yes ! I love working with fish, especially the cutting because it requires a lot of attention and finesse. It is a food that I like to work with in all forms, whether raw or cooked.

  • Do you have any kitchen rituals?

Not really rituals, rather habits acquired with experience in maintaining and cleaning a kitchen. These are key steps for good service.

  • How would you describe the menu you created for the Café Oz Bordeaux restaurant?

We have imagined a contemporary menu that remains rather on a traditional French format on the plate. We buy products from all regions and countries (spices) that we like to work in the "French" way. The Café Oz Bordeaux restaurant offers two menus per year depending on the season (spring-summer and autumn-winter), as well as timeless dishes that remain all year round (burgers and pizzas).

Where is the restaurant located?

The Café Oz Bordeaux is located near the Cité du Vin on the basins afloat, in the Bacalan district. Our establishment is located precisely at 1 Quai Armande Lalande – Hangar G2, in the city of Bordeaux.

Restaurant reservations are open Monday to Friday, 12:00 p.m. to 1:15 p.m. To book, we invite you to go directly through our website. If you want more information, you can call 05 56 10 80 45.

Does the restaurant have a terrace?

The establishment has a total area of 550 m2 including 180 m2 of terrace. Depending on your preferences, you can therefore choose to have lunch inside or outside.

What are the restaurant hours?

The team warmly welcomes you every week, Monday to Friday from 12 p.m. to 2 p.m.
